Wonderful summer menus

It's finally here, the long-awaited summer! Summer is all about living, laughing, and eating outdoors, and that's why we've dedicated this newsletter entirely to enjoyment.
Here are some wonderful recipes for an Italian-style menu with primo piatto (= first course with pasta) and secondo piatto (= second course with meat or vegetables)!
First things first – THE WELCOME DRINK:
White wine spritzer with melon & lime 🍈
Refreshing summer drink – looks great, little work, wonderfully summery!
Ingredients (for 2 large glasses):
• 200 ml well-chilled Riesling
• 100 ml mineral water
• Some balls of melon (form them with a spoon)
• 1 lime, sliced and halved
• 1 splash of lime juice
• 2-3 ice cubes per glass
Preparation:
• Add ice cubes to the glass, melon balls and lime juice.
• Pour in Riesling and top up with mineral water.
• Place the lime slice decoratively on the rim of the glass.
• Stir briefly and serve ice cold.
PRIMO PLAATTO:
Riesling summer pasta with lemon & herbs
Vegetarian, tangy, delicious!
Ingredients (for 2 people, as part of the menu):
• 200 g linguine (= flat, narrow ribbon pasta)
• 1 zucchini, cut into fine half moons
• 100 g cherry tomatoes, halved
• 1 small onion, chopped
• 1 garlic clove, finely chopped
• 100 ml Riesling
• 150 ml cream or crème fraîche
• Zest and juice of 1 organic lemon
• Fresh parsley, basil or dill, chopped
• Salt, pepper, olive oil
Preparation:
• Cook pasta. (With spaghetti, by the way, they say it's just right when you throw it against the wall and it sticks. Linguine is a bit heavier, so it doesn't work quite as well. If in doubt, you can just fish a noodle out of the water and try it, although throwing it against the wall is fun! ;-))
• Sauté the onion and garlic in olive oil.
• Briefly fry the zucchini and tomatoes.
• Deglaze with Riesling and simmer briefly.
• Add cream, lemon juice and zest, season to taste.
• Mix in pasta and serve with herbs.
Tip: If you like seafood, you can fry 200g of peeled shrimp in the pan after the onions.
SECOND PLATE:
Riesling grilled skewers with chicken & summer vegetables
Perfect for a barbecue evening!
Ingredients (for 2 people):
• 2 chicken breast fillets (diced)
• 1 bell pepper (chopped)
• 1 zucchini (sliced)
• 1 red onion (chopped)
• 150 ml Riesling
• 3 tablespoons olive oil
• 1 tbsp honey
• 1 tsp mustard
• 2 garlic cloves (crushed)
• Salt, pepper, rosemary
Preparation:
• Mix a marinade from Riesling, olive oil, honey, mustard, garlic, salt, pepper and rosemary.
• Marinate the chicken cubes and vegetables for at least 1 hour.
• Put everything on skewers and grill on the grill (or in a grill pan) for about 10-12 minutes, turning several times.
Tip: Vegetarian alternative:
Instead of chicken, simply use halloumi cubes or marinated tofu cubes.
Dessert: Peach Riesling Sorbet 🍑
Ingredients:
• 500 g ripe peaches
• 1 additional peach
• 150 ml Riesling
• 80 g sugar
• 1 tbsp lemon juice
• Whipped cream (optional)
Preparation:
• Peel and puree the 500 g of peaches.
• Cut the additional peach into thin slices.
• Add all ingredients and season to taste.
• Freeze in an ice cream maker or in the freezer, stirring regularly.
Tip: The alcohol prevents the ice cream from setting as quickly, so allow a few hours for the freezing process. If you don't have an ice cream maker and don't want to constantly stir, you can pour the mixture into fun silicone ice cube trays (there are heart-shaped ones, for example) and then place several of them in a dessert bowl. Top with a dollop of whipped cream and the peach slices for decoration!
