The color of the wine is determined almost entirely by the skin of the grapes and not by the flesh. It is therefore entirely possible to make a white wine from a red grape if the skin is removed early enough in the process so that it cannot release its coloring matter into the juice. This is how our delicious Blanc de Noir is created - a white wine made from dark grapes.
By the way: Most champagne varieties fall into this category.
