Unlike most white wines, Riesling ages exceptionally well; even over decades, its extract and fruity acidity develop positively, reinforcing the character of the terroir—its origin, so to speak. The Riesling vine reacts exceptionally sensitively to its environment, and by that, we actually mean the rock on which the vineyard rests. Even if all other parameters (grape variety, aging, alcohol content, etc.) are identical, the wines taste completely different depending on the soil and rock on which they are grown.
At the Graf von Weyher winery, Riesling makes up a whopping 25% of our vineyard area. What's particularly unusual (and something we're actually quite proud of) is that we have four (!) different types of rock on this relatively small area—and that's rare! Slate, red sandstone, marl limestone, and granite. This allows us to produce four different terroir wines (or single-vineyard wines). We've explained the concept of terroir wines in detail (and entertainingly) in a brand-new brochure.
